It is used in jams, marmalades, gels and fruit pastes to optimize gelation.
Also to reduce the browning of fruits and vegetables, provide acidity, obtain inverted sugar, etc.
How to use:
Incorporate into the product, either in a solid state directly or diluted in water.
Usual doses:
2-8 gr./kg. of product.
