The best time for figs is between November and January. The rest of the year, the figs are considered old crop. The old crop figs are still good. They will tend to crystallize with sugar, making them appear white and almost moldy. They are not contaminated in any way. During the off months you can expect the figs to crystallize within 2-4 weeks after purchase.
